Shabbat Under the Stars is a summer series hosted by the Institute of Soil and Soul. We gather in the field to share good food, meaningful connection, and the quiet rhythms of a sacred pause. Each event features a different chef and a new interpretation of what Shabbat can taste and feel like when rooted in the land.

This summer, Shabbat Under the Stars returns—an intimate dinner series where culinary artists and farmers come together to create soulful, seasonal meals in the open air.

Each dinner invites a guest chef to reinterpret Shabbat through food, bringing new flavors, stories, and meaning to the table. This isn’t just a meal—it’s a gathering of neighbors, a celebration of seasonality, and a moment of rest from the digital world.

Head and sous chef | Ambrosia Foods

Chef Charles Welch began his culinary journey at Le Cordon Bleu in Chicago, graduating in 2005. He trained under acclaimed chefs Michael Kornick (mk The Restaurant) and Andrew Zimmerman (Sepia), where he rose to Executive Sous Chef and helped earn the restaurant its first Michelin star. In 2013, Welch co-founded Honey’s in Chicago’s West Loop, gaining recognition for his Mediterranean-inspired cuisine, including a Jean Banchet Award nomination for “Rising Chef of the Year” and praise from leading critics. He later partnered with Andrew Miller at Out To Lunch Hospitality, launching the supper club conceptGood Fortunein 2019. After two years leading the group’s culinary vision, Welch returned to Eleven Eleven(formerly Honey’s) to relaunch the dinner and to-go menus with Ahmed Braimah, and he now also serves as Head Chef at Ambrosia Foods.
